easyWhy tonight. Crunchy stand-in when cabbage is gone. Mustard is the point.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- celery
- mayo
- dijon
- lemon
Good if you have them, fine if you do not: parsley, hot sauce.
Method
- Cut the celery into fine matchsticks rather than slicing it into crescents. The shape is most of why this works.
- Dress it at least twenty minutes ahead so it softens slightly and takes the dressing on.
- Mustard whisked into the mayonnaise first, then lemon, so it stays emulsified.
- It is celeriac remoulade's cousin made from the stalk, and it is sharper and more refreshing.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- celery
- Salinity and a bitter green edge, which is why it sits in so many bases without ever being the point.
- mayo
- An emulsion, which means it is a delivery system for fat and acid at once.
- dijon
- Sharpness and, more usefully, emulsifying power — a spoonful is what holds oil and vinegar together in a dressing that would otherwise split.
- lemon
- Acid you add at the end, not the start.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
