Method
- Fat-wash the bourbon: brown a pat of butter, stir it into the whiskey, freeze it for four hours, then lift the solid fat off and strain.
- The whiskey keeps the flavor of the butter and none of the grease. It is the same trick as a Ramos gin fizz's texture, arrived at differently.
- It takes a day and it is worth doing once for a bottle rather than for a glass.
- Then build it as an Old Fashioned — maple, bitters, one large cube, thirty seconds of stirring.
