Broccoli cheddar soup
Cheese off the heat so it does not split.

easyWhy tonight. Cheese off the heat so it does not split.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- broccoli
- cheddar
- onion
- milk
- butter
Good if you have them, fine if you do not: potato.
Method
- Cook the broccoli in the soup base, not separately in water. Everything it gives up should stay in the pot.
- Blend it before the cheese goes in, and only to a rough purée — completely smooth broccoli soup looks like something from a tin.
- Cheddar in off the heat, in handfuls. Boiled cheese splits and goes grainy and never recovers.
- Nutmeg and mustard are the two things that make this taste deliberate. A little of both.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- broccoli
- The stalk is better than the florets and most people throw it away.
- cheddar
- Sharpness plus melt. Aged cheddar tastes like more and melts like less, so a dish that wants both usually wants a mix — grate it, do not slice it, and take the pan off the heat before it goes in.
- onion
- The base under most of this library.
- milk
- Softness and a little sweetness.
- butter
- Flavor and body in the same spoonful.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Käsespätzle
Drop batter into simmering water, then a pan with browned onions and cheese. Not pasta. Not mac.
