Method
- Berries with sugar and lemon in the baking dish, and into the hot oven on their own for ten minutes to get bubbling.
- Rub cold butter into the flour, sugar and baking powder until it looks like gravel, then just enough liquid to bring it together. Stop mixing.
- Drop it in rough spoonfuls over the hot fruit — gaps on purpose, so steam escapes and the topping bakes rather than steams.
- Moderate oven until the topping is deep gold and the fruit is bubbling at the edges. Cool at least twenty minutes; straight from the oven it is lava with no set.
