Method
- Mushrooms first, in one layer, untouched until they have released their water and gone past it.
- Beef seared separately and hard. Cooking them together means neither browns and both stew.
- Onion in the fat, then Worcestershire and a splash of stock, scraping the base clean.
- Cold butter off the heat and thyme at the end. Never boil it once the butter is in.
